Bob's Peach-Berry Upside Down Crisp

Using frozen peaches and boysenberries means you can make this any time of year.

                              Ingredients:

 

         1             1-lb bag of frozen unsweetened peaches , thawed
2             cups (about 8 ounces) frozen unsweetened boysenberries

1             cup of sugar
1   
         cup of all purpose flour
½   
        cup of old fashioned oats

½   
        cup of milk
1             teaspoon of vanilla extract

-½         cup (1 stick) of unsalted butter, melted and cooled

 

                             Cooking Instructions:

 

Preheat oven to 400 Degs. Stir peaches, berries and ½ cup of sugar in a large bowl to blendLet stand about 15 mins.

 Meanwhile, stir flour, oats, milk, vanilla and remaining ½ cup of sugar in a medium bowl until blended. Mix in the butter (batter will be thick).

Spread the batter in the bottm of a lightly greased 8x8x2 inch glass baking dish.  Spoon the fruit mixture atop the batter. Bake until fruit mixture is cooked through and the bottom crust is brown. About 45 mins. Let stand for 10 mins. Serve crisp warm or at room temp. with ice cream.
