Spaghetti Squash Casserole

1 spaghetti squash
1-1/2 c. shredded cheddar cheese, separated
1-1/2 c. shredded mozzarella cheese, separated
1 red bell pepper, diced
1 green bell pepper, diced
1 med. onion, diced
bulk Italian sausage (amount is determined by your preference)
minced garlic (to your taste)
1 can (15 oz.) diced or chopped tomatoes, Italian style
 

Slice squash in half and scoop out seeds.  Cover cut side with saran wrap.  Microwave halves, cut side up, for 15 minutes.  Cool and scoop out "spaghetti" strands.  Layer squash strands in a 13 x 9" baking dish.  Cover squash with 1/2 cup cheddar cheese and 1/2 cup mozzarella cheese.  Brown sausage and crumble on top of cheeses.  Sautee peppers, onion and garlic in butter or a little olive oil until soft, add tomatoes (with juice) and heat through.  Spoon over sausage and cheeses.  Top with remaining 1 cup of cheddar and mozzarella cheeses.  Bake at 350 degrees for 35 - 45 minutes or until hot and bubbly and cheese is melted.
