Cherry Topped Eggnog Ring

1 can mandarin orange segments
1 pkg. (4-serving size) cherry or cranberry Jello
1 c. boiling water
1 c. chopped apple
1 pkg. (4-serving size) lemon jello
1 c. boiling water
3/4 c. eggnog
1/4 c. cold water
1 tsp. dark run (optional)
2 c. Cool Whip
Drain mandarin oranges, measuring syrup. Add water to syrup to make 1 cup.
Dissolve cherry Jello in 1 cup boiling water. Add measured liquid. Chill until slightly thickened, about 1-1/4 hours. Add mandarin oranges and apples.
Spoon into a large 6 cup mold and chill.
Meanwhile, dissolve lemon Jello in 1 cup boiling water. Cool to room temperature. Add eggnog, cold water and rum. Chill until slightly thickened, about 1-1/4 hours.
Fold eggnog mixture into 1 cup Cool Whip. Spoon over fruit gelatin layer in mold.
Chill until set, about 4 hours or overnight. Unmold onto chilled serving plate. Garnish with remaining topping.
If desired, garnish with sugar-coated cherries. To sugar coat, beat 1 egg white until frothy. Dip cherries in the egg white and then into granulated sugar.
