Pineapple Cake

2 eggs
1 (20 oz.) can crushed pineapple, undrained

2 c. flour

1 c. sugar

1 c. brown sugar

2 tsp. baking soda

1 c. chopped walnuts

 

Beat eggs until fluffy.  Add pineapple, both sugars and baking soda.  Mix by hand.  Stir in walnuts.  Pour into ungreased 13 x 9" pan.  Bake at 350 degrees for 45 - 50 minutes.

 

FROSTING

Beat together 3 oz. softened cream cheese, 1/4 c. butter or margarine, and 1 tsp. vanilla.  Gradually add 2 c. powdered sugar and 1/2 tsp. ground ginger.  Beat until smooth.
