3 Cups Sugar
2 3/4 Cups all purpose flour
1 1/8 cups cocoa
2 1/4 teaspoons baking powder
2 1/4 teaspoons baking soda
1 1/2 teaspoons salt
3 eggs
1 1/2 cups milk
1 Tablespoons Vanilla extract
1 1/2 cups very hot water
Sift together the dry ingredients and set
aside, in large mixing bowl mix together eggs, oil, milk and vanilla extract,
slowly add dry ingredients and mix for 5 minutes. Gradually add the hot water
on low speed just until combined. Pour into 3 greased and flour 9 inch round
cake pans. Bake at 350 for 25-30 minutes.
Chocolate Frosting
12 Tablespoons of Cocoa
8 Tablespoons butter (1 stick)
4 Cups confectioner's sugar
1 Tablespoon vanilla extract
3-8 Tablespoons of milk
Place cocoa and butter in double boiler,
stir until melted and remove from heat. Let sit 5 minutes. Gradually
add confectioners sugar using a hand held mixer. Add vanilla and milk until
creamy.
