Microwave Cheesecake

CRUST
1/2 c. butter or margarine
2 c. graham cracker crumbs
1/2 c. sugar
1/2 tsp. cinnamon

 

FILLING
3 (8 oz. each) pkgs cream cheese
5 eggs
1 c. sugar
1/2 tsp. vanilla

 

TOPPING
2-1/2 c. sour cream
1/3 c. sugar
1-1/2 tsp. vanilla

 

Place butter in 2 quart utility/baking dish (microwave safe).  Heat in microwave on full power for 1 minute or until melted.  Blend in crumbs, sugar and cinnamon.

 

Press crumb mixture firmly bottom and sides of dish.  Cook in microwave on full power for 1-1/2 minutes or until firm.

 

Beat cream cheese until smooth.  Beat in eggs, one at a time.  Mix in sugar and vanilla, until smooth and creamy.  Pour over crust.  Cook in microwave on Level 8 for 12 to 15 minutes oruntil knife inserted near center comes out clean.*

 

Combine sour cream, sugar and vanilla.  Blend well.  Pour mixture over cheesecake.  Cook in microwave on full power for 1-1/2 to 2 minutes, or until outer edge is set.  Chill.

 

Glazed fruit or fruit pie fillings may be spread over top after chilled.

 

*  If your microwave does not have a turntable, you may want to turn dish halfway through cooking time.
