Gumbo

(this recipe is for 8 qrts)
10 tablespoons bacon drippings
10 cups chicken stock
12 tablespoons flour
2 cups water
4 onions, chopped fine
4-5 stalks celery, chopped fine
2 teaspoons salt
2 teaspoons cayenne pepper
1 teaspoon each paprika, dried thyme, and ground cumin
2 bay leaves, broken
2 cans #2 tomatoes(large)
4 pounds raw shrimp
2 packages cutup frozen okra
1 1/2 pounds crabmeat
Hot fluffy rice
Brown flour in bacon drippings to make a roux. Add onions and celery and
brown for five minutes, or until vegetables are tender. Add stock, water,
tomatoes, and all seasonings. Bring to a boil and boil over medium heat
for one hour. Peel shrimp (devein if you want to) while the gumbo boils.
Pick your crabmeat for any stray bits of shell (they always miss some) Add
shrimp, crabmeat, and okra to gumbo and cook twenty minutes longer. Serve
over fluffy white rice.
