Pizza Dough

1½ cups warm water 3¼ cups unbleached flour
1 cup semolina flour ¼ cup olive oil
1 tbs pizza dough flavor ¼ cup dough relaxer
1 tbs baking powder 2 tbs instant yeast
1½ tsp salt
Mix yeast in warm (@110o) water and allow to activate. Mix
in all ingredients slowly. Mix until dough leaves the side of the bowl. Turn
out on a floured dough board. Knead 6 to 8 minutes. Place in greased bowl,
cover with damp linen, allow to rise for 2 hours. Tap dough and allow to rise
again.
