Gingersnap Stew

whole small chicken , cleaned and
rinsed (bout 4 lbs)
2 cans of whole tomatoes, broken in pieces including juice
3 “Knorr” Chicken bouillion cubes
1 whole stalk of celery, leaves included, chopped
1 really large onion chopped
1 cup of Uncle Bens White Rice, rinsed and uncooked
3 tbls of parsley or cilantro, chopped, fresh
is always better and I prefer cilantro
In
an 8 quart stock pot place the chicken and fill the pot with water until 4
inches from the top . Bring to a boil and simmer until chicken falls apart when
removed from the pot.
Place
the chicken on a platter to cool. Skim the excess from the sides of the pot. Add
all the other ingredients and bring to a boil. Reduce heat and simmer.

now go watch “Who wants to be a Millionaire” or something.
When
the Chicken has cooled remove all the meat and place in the pot and stir in .

Extras:
Sometimes
I like to add a large can of chicken broth to the water. And remember, to cook
till the celery is soft…..Serve with a nice crusty bread and a cold beer.
