Buckeyes

1 1/2 cups creamy peanut butter
1/2 cup softened butter
1 lb. confectioner's sugar
1 teaspoon vanilla (optional)
1 large pkg. chocolate chips
OR
10 squares of semi-sweet baking chocolate
1 block paraffin, if desired
 
Combine peanut butter, butter, confectioner's sugar, and vanilla.  Mix thoroughly.  When well-combined, form into small balls to resemble Buckeyes about an inch or less in diameter.  Melt chocolate in the microwave or in top of double boiler (do not boil water), and add a block of paraffin, if desired.  (The paraffin will help the chocolate solidify.)  Stir the chocolate mixture frequently.  

Use a toothpick to dip the balls of peanut butter mixture into the melted chocolate, leaving a small portion on the top of the Buckeye uncoated to form the "eye".  Gently, with a spoon or your finger, rub out the small toothpick hole in the "eye".  Place the Buckeyes on waxed paper on a cookie sheet and refrigerate or freeze until set.
