Cuban Ajiaco Stew
(Soup to make you feel better)
Submitted by Arfito
Ingredients
1 Nice big fat pressure cooker
1 to 2 pounds beef or pork without fat
Cut into smaller pieces
2 potatoes
2 malangas (root vegetable) Peel which is a pain and cook until a bit tender
3 Half way ripe plantains
1 Name root (Same as for malangas)
1 yucca root (Same as for mélanges) I hate peeling this root with a passion; sometimes you can find it frozen in a package but fresh is best.
1 can tomato puree
1 tsp smash up garlic clove
1 tsp smash up onion yellow or white does not matter
1 cube beef bouillon
1 cube ham flavor bouillon
˝ cup vegetable oil like Canola for sauté
Water to cover stuff but do not over do it or your pressure cooker overflows. Then you will have to clean it up.
Wedges of lemon or lime
How to make it.
1. Sauté tomato, garlic, onion.
2. Put the entire bunch of ingredients inside pressure cooker and cook medium heat until done, I say about an hour or less. Just check. Put those glasses on.
3. Eat with a wedge of lemon or lime sprinkled on it. Watch it if you have high blood pressure
